For the stuffing:
Shell fresh green peas. Wash and cook on micro high for 30 secs.
Mash lightly with the back of a spoon.
Season with salt, finely chopped green chilies and chaat masala.
The stuffing for the tikkis (pattties) is ready.
For the patties:
Boil potatoes. Peel and mash when still hot.
When slightly cool – add salt, chaat masala, dried breadcrumbs, chopped green chilies and ginger.
Mix well and divide into equal portions.
Put the green peas stuffing and form smooth patties.
Shallow fry on a non-stick pan till crisp and brown.
Serve piping hot with a sauce of your choice. Tamarind sauce goes very well with it though 🙂
Do not overboil potatoes.
Do not over mash them too.
