6-7 medium red or other type of potatoes, cut in half or in 4 edges
1 clove garlic
5-6 fresh basil leaves, roughly torn
1/2 red chilly, deseeded and chopped, or more chilly, depending on how spicy you like your food
juice of 1/2 lemon
60 gr | 2 oz butter
salt and black pepp
- Preheat the oven to 200 °C | 400 °F
- Put the cut potatoes in an oven-proof dish. Season with salt pepper and some olive or sunflower oil. Cover the dish with aluminum foil and bake in the preheated oven for 20-30 minutes. Remove the foil, turn the oven to 220°C | 430 ° F and bake for further 10-15 minutes. Baking time depends on how thick the potatoes are cut. So just keep an eye on them.
- Meanwhile make the butter: Put all of the other ingredients in a food processor and pulse until chopped but not sludgy.
- When the potatoes are out of the oven and while still very hot, pour the butter over them and stir so they are all covered.
They taste best if you do not peel the potatoes.
