Ingredients:

6-7 medium red or other type of potatoes, cut in half or in 4 edges
1 clove garlic
5-6 fresh basil leaves, roughly torn
1/2 red chilly, deseeded and chopped, or more chilly, depending on how spicy you like your food
juice of 1/2 lemon
60 gr | 2 oz butter
salt and black pepp

Method:

  • Preheat the oven to 200 °C | 400 °F
  • Put the cut potatoes in an oven-proof dish. Season with salt pepper and some olive or sunflower oil. Cover the dish with aluminum foil and bake in the preheated oven for 20-30 minutes. Remove the foil, turn the oven to 220°C | 430 ° F and bake for further 10-15 minutes. Baking time depends on how thick the potatoes are cut. So just keep an eye on them.
  • Meanwhile make the butter: Put all of the other ingredients in a food processor and pulse until chopped but not sludgy.
  • When the potatoes are out of the oven and while still very hot, pour the butter over them and stir so they are all covered.

Tip:
They taste best if you do not peel the potatoes.
