2 large Cod fillets
2 tsp of yellow curry paste
2 tsp of desiccated coconut
1 tsp of fish sauce
Zest and juice of one lime
Ingredients for Garnishing :
1 thinly sliced fresh red chilli
2 tsp of sweet chilli sauce
- Place each fish fillet on a piece of tin foil and spread over the yellow curry paste.
- Sprinkle over each fillet half of the coconut, fish sauce, lime juice and zest. Bring the foil together into a parcel and place on a baking tray.
- Cook for 15-20 minutes on gas mark 6 or 200C
- Serve on a bed of boiled basmati rice, sprinkle with the red chilli and drizzle with the sweet chlli sauce.
