Ingredients :
1 small jicama
1 small red bell pepper
2 cups diced watermelon
small can mandarin oranges, drained
¼ cup thinly sliced red onion
1 tomato
1 carrot, cut into julienne
1 tblsp. cilantro
hot sauce, to taste
6 tblsp. olive oil (optional, can leave out)
salt and pepper, to taste
4 tblsp. fresh lime juice


  • Make the dressing by combining the olive oil, 4 tbs. lime juice and hot sauce. Add a little salt and pepper and set aside.
  • Peel the jicama and cut into a thin julienne strips. Peel, seed and core the red pepper; cut into thin julienne strips.
  • Cut the tomato in half crosswise. Remove seeds with your finger. Cut the tomato into thin julienne. Combine the jicama, bell pepper, watermelon, onion, tomato and cilantro.
  • Whisk the dressing together and toss with the vegetables. Arrange the salad on serving plate. Best served fresh.
