Ingredients for the Orange layer:

2 oranges, very thinly sliced
1 cup (220g) caster sugar
1/2 cup (125ml) water
1 tsp ground cinnamon

Ingredients for the Cake:

150g butter, melted
1 cup (150g) sifted flour
1 cup (120g) almond meal (Ground almonds in a food processor with a tablespoon of sugar)
1 cup (220g) caster sugar
4 eggs
1 tsp ground cinnamon

Method for the Orange Layer:

  • Preheat your oven to 160˚C.
  • To make the topping, place sugar, water and ground cinnamon in a 9.5 inch cake tin over medium heat.
  • Stir until the sugar dissolves then add the orange slices.
  • Simmer for about 10-15 minutes or until orange is soft, and set aside.

Method for the Cake:

  • Place the eggs, sugar and ground cinnamon in a bowl and using an electric whisk, beat for 10 minutes or until the mixture is thick and has become thrice in volume.
  • Mix a little of the sifted flour with the almond meal, and lightly mix with your fingertips.
  • Fold in the rest of the flour over the beaten mixture and don’t over mix.
  • Fold in the butter and almond meal.
  • Pour mixture over the oranges and bake for 25-30 minutes or until a skewer comes out clean.
  • Upturn the cake, and enjoy hot with your tea!
