Ingrediants :

1 pukeko
1 glove garlic
1/2 tsp cinnamon
1/2 tsp mixed herbs
2 cloves
1 sprig parsley
6 peppercorns
1 lrg onion
2 med carrots
2 stalks celery
30g uncooked rice
salt and pepper

Method :

  • Skin pukekp and retain only the leg and breast meat.
  • Place in a sauce pan with one of the carrots and one of the celery stalks, garlic, herbs, cloves, parsley and peppercorns tied in a muslin cover with 6 cups of water, bring to the boil and simmer for 3 hrs covered with a tightly fitting lid.
  • Strain the liquid and discard the veges and herbs.
  • Add onion and the remaining carrots and celery stalks, all finely chopped. Season to taste, add rice and cook until tender.
  • Serve with croutons
