Serves 3-4

Preperation Time: 15 minutes

Ingredients

2 teaspoon coriander seed
1 teaspoon cumin seed
1 tablespoon fish sauce
300 grams rump steak, cut into stir fry strips
2 tablespoons vegetable oil
1 tablespoon roasted chilli paste
1 tablespoon oyster sauce
1 tablespoon fish sauce, extra
Pinch of sugar
1 bunch of asparagus, peeled and sliced on the diagonal into 4cm pieces
½ cup Thai basil leaves
3 tablespoons fried shallots
Large pinch of white pepper
Large pinch of roasted chilli powder

Method

  • Roast coriander and cumin seeds over a low fl ame until fragrant. Grind to a powder and toss with the beef and
    fish sauce. Marinate for an hour or so.
  • Heat the oil in a wok until smoking and add beef, stir fry briefly to seal and then add the roasted chilli paste,oyster sauce, fish sauce, sugar and asparagus. As soon as it’s combined add the basil. Cook until the basil wilts,only a moment. Stir in the shallots, pepper and chilli powder.
  • Transfer to a serving plate.
